Homemade: Pan-fried mackerel with sliced lotus root

I’m a big fan of lotus root but never knew what to do with it for a long time. Turns out it’s actually quite simple to cook — just slice it up and boil, pan fry or throw it in the oven with some seasoning. They’re not only awesome looking but crispy-crunchy, filling and fun to eat!

I had it for dinner paired with a mackerel filet (pan-fried with a sprinkle of seafood seasoning rub, which I forgot to rub in). A bit on the oily side but it’s always good to get some healthy fats from the fish. 🙂

Tip: If you don’t know how to cook, choose a flavourful fish like the mackerel/salmon and no matter how you cook it, it’ll still taste pretty decent.
