Here’s another tasty recipe (that could be healthier without the Hainan Chicken Rice) but still counts because it’s chock full of veggies! I used the readymade Prima Taste Hainan chicken paste that you can find at most supermarkets in Hong Kong — I got mine at the trusty Park N’ Shop — with a mix of red and white rice. Remember to soak the rice for a few hours or you’ll end up with crunchy uncooked red rice pellets (not so nice).
When the rice is cooking, wash and stirfry the Brussels sprouts and cute Korean toadstool mushrooms, and add a bit of salt and oyster sauce to taste. See if you need to add some water or chicken broth to it, but be careful as the mushrooms get quite watery near the end. Last step: Eat with some store bought chicken from your neighborhood roast meat shop! π
