Urban Bakery probably isn’t your go-to place for a healthy bite since they’re best known for their buttery, flaky croissants and their croissant-wiches (packed with hairy crab, langoustine curry and other hearty fillings)… BUT, they do make a mean salmon salad at their new Landmark location.
If you can resist all the fresh-baked pastries, duck confit sandwich, Guinness beef and mushroom stew, Mac&Cheese and the Valrhona chocolate cake filled with M&Ms and lined with Kit-Kats, the salad is actually quite good.
The salmon is cooked sous vide (translation: a method of cooking food sealed in airtight plastic bags in a water bath for longer than normal cooking times) so it’s really tasty and tender, plus it’s got a slightly smoky flavour since it’s been seared. The avocado chunks are perfectly ripe, and the string beans and sugar peas add some crunch. The salad is then topped with a Japanese-style onsen egg and some Parmesan shavings to give it a bit of an edge.
